Miguel Villalobos Luna

Miguel Villalobos Luna began his career in the restaurant industry in Mexico, managing three establishments in the city of Chihuahua and along the picturesque Pacific coast in Mazatlán. Additionally, he possessed expertise in the construction sector. In 2006, he made the decision to expand his horizons, leading him to Vancouver, Canada. There, he immersed himself in various restaurant environments, initially starting as a cook. However, his extensive experience propelled him swiftly into roles as a sous chef and eventually a chef.

Indalecio Xicohtencatl

Indalecio Xicohtencatl-Lara embarked on his journey in the food industry at a young age in the USA. He gained comprehensive knowledge by working in various positions within restaurants, beginning as a dishwasher, then advancing through roles as a busser, waiter, and cook. His diverse experience enabled him to swiftly ascend to higher positions within the establishments he worked for. Prior to his move to Vancouver in 2006, he successfully operated his own taqueria (taco shop) in Mexico. While initially working in construction upon arriving in Vancouver, his passion for culinary arts led him to pursue opportunities in Canadian restaurants, where he continued to enhance his skills and accumulate invaluable experience.

Miguel and Indalecio crossed paths when they commenced working together at the same restaurant. Over time, fueled by their shared dreams and enriched by their accumulated expertise in restaurants and Mexican cuisine, they decided to embark on a new venture. With unwavering motivation, extensive knowledge, and boundless creativity, they brought their flavorful vision to life: Holy Guacamole.
